Vanishing Oatmeal Raisin Cookies


Let me share to you one of the recipes collected by my female employers. My employer just gave me the recipe and told me to make it. I just followed the instruction and thanks God coz it turned out well. And since then, I've been baking it almost every week for the children's food box for school, but the adults are also loving it,:)

Ingredients:

1 cup (2 sticks) margarine or butter, softened
1 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1 - 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups oatmeal (quick or old fashioned, uncooked)
1 cup raisins

Procedure:
1. Heat oven to 180 degrees Celsius.
2. Beat together margarine & sugars until creamy.
3. Add eggs & vanilla; beat well.
4. Add combined flour, baking soda, cinnamon & salt; mix well.
5. Stir in oats & raisins; mix well.
6. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
7. Bake 10 to 12 minutes on cookie shhet; remove to wire rack.

**for Bar cookies:
Bake 30 to 35 minutes in ungreased 13 x 9 - inch metal baking pan.

I always make bar cookies at my employer's place coz it's lesser work than individual cookies,:)
